Join us as a Denver based Program Executive Chef and then deploy to Antarctica 6 months per year!

Working as a Program Executive Chef, you will be accountable for the management and oversight of food production at McMurdo, South Pole, Palmer Stations and associated remote sites during your six (6) month deployment. (Typical deployment timeframe is from September through February) Individual must ensure personally or through subordinate supervisors a high level of customer, client, and employee satisfaction.  Position is required to provide strong leadership and guidance to all employees (approximately 35 between all three locations).

Key Responsibilities:

  • Must be able to deploy to Antarctica for a minimum of 6 months annually
  • Directs a high quality, cost effective food service program.  Assumes accountability should any assigned responsibilities fail to comply with applicable regulations or sound business practices. 
  • Periodically physically performs all types of high volume food production and preparation duties.
  • Performs various inventory and quality control tasks as well as completes various inspection checklists. 
  • Maintains a high degree of communication with Culinary Manager in  Areas of Responsibility and Interest.
  • Collaborates and coordinates on 5 to 10 year equipment and facilities maintenance plan.
  • Assures a high degree of sanitation is observed in all assigned areas and responsibilities.
  • Plans a variety of nutritionally balanced, attractive, and cost effective meal menus.  Develops appropriate recipes and makes sure all required supplies, resources, and materials are purchased, ordered, and available when needed.
  • Directs, trains, supervises, leads, evaluates, develops, and coaches all assigned food service personnel for all food service on continent.
  • Ensures 100% compliance to menu plans and recipes with daily follow up and monitoring. 
  • Develops, maintains, or approves various administrative matters or materials such as budget expenditures or development, operational reports, and records.
  • Oversees the Waste program, production records, and training of all employees.
  • Implements an effective safety program and documents all steps regularly taken to implement the program.
  • Maintains excellent client and employee communications to continuously improve the quality of provided services and resolve problems, to include, but not limited to, tracking all comment cards from McMurdo, South Pole, and Palmer Station.
  • Ensures all stations strictly adhere to federal regulations when it comes to food storage, handling and preparation and other safety and sanitation codes involving dining utensils, kitchen equipment and overall cleanliness. Serves as host to Army Veterinary Command food safety officer.
  • Coordinate purchasing the products and supplies necessary to include all food and equipment. Also drives future equipment procurement and project work.
  • Directly supervises assigned supervisors and employees.  Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
  • Other related duties may also be assigned. 

Preferred Qualifications:

  • Two years of formal post-secondary training directly related to this field (or two years of additional related experience)
  • Minimum five years of experience as a chef or kitchen manager in a high volume setting or minimum five years of restaurant management experience.  Preference will be given to those candidates with national culinary certification(s) and multi-location management experience.  Preference will also be given to those with prior work experience in a high production setting.  Prior experience must evidence supervisory skills and knowledge of food preparation, and quality control procedures. 
  • Excellent interpersonal skills needed to effectively motivate, direct and lead assigned employees.  Must be proficient in performing many tasks simultaneously while at the same time making sure all details are properly addressed in those tasks.   
  • A high energy level or sense of urgency in carrying out assigned tasks.
  • The ability to operate basic office equipment and software programs to include email, Microsoft Excel, Word, Outlook, etc. 

Incumbents are occasionally required to walk, use hands to finger, handle, or feel, reach with hands and arms, taste, and smell.  The employee must frequently lift and/or move up to 10 pounds and occasionally lift and/or move up to 50 pounds.  Position is required to have the physical stamina to work long hours for extended period of times.  Position is occasionally exposed to moving mechanical parts, some toxic or caustic chemicals, extreme cold, extreme heat, and some risk of electrical shock.  Requires the employee to deploy to and work in an extremely cold environment.
